In early May I made the long and pictureque journey to Salt Spring Island to visit Margaret Thomson of Windrush Farms. Margaret is very involved in rare breeds of farm animals in Canada and Windrush Farms provides one of the homes of the Ridley Bronze Turkeys, a rare and endangered breed of turkey; the only true Canadian breed of turkey. As part of Celista Springs Ranch's sustainable agriculture philosophy, it has become the home to a dozen of these turkeys in an effort to help support its numbers by creating a breeding flock as a source of heritage turkey genetics and for a quality heritage bird for market, in turn, supporting the continued genetics of this beautiful bird.
